These metabolites readily bind with collagen and cellulose with hydrophobic interactions[8], and possess outstanding antioxidant and neuroprotective acitivites[9]. Here, we will report the structure-activity relationships in the neuroprotective activities and the interactions with biopolymers for the GA metabolites. We will further discuss some most recent results from our metabonomic investigation on the effects of gallic acid on the endogenous metabolism of rodent models.
